Vanilla Chia Tapioca Pudding

Ingredients

  • 7 cups milk (brazil nut, hemp seed, or cashew preferred)

  • 2 tablespoons vanilla extract

  • 1 vanilla bean

  • 2 tablespoons cinnamon

  • 1/3 cup agave nectar

  • Pinch of sea salt

  • 1 cup chia seeds


Preparation

  1. Blend all the ingredients (minus the chia seeds) in a high speed blender and pulse. Place chia seeds in a large bowl, pour the mixture over them, and begin to whisk. Keep whisking periodically to be sure the tapioca does not clump.


It takes about an hour and a half for the tapioca to set. You can adjust the sweetness. This is a great healthy omega-rick quick dessert or a kids snakc.
